Recipe Thursday

Wow!  Fall is in the air!  I found this Yummy Fallish sandwich that we had yesterday for lunch.  Hope you enjoy!  (Sorry, I didn't get any pics.  :/  I'm still getting back in the swing of things!)

Harvest Apple Sandwich

Honey Mustard
2 slices of whole wheat bread
1 apple, sliced thinly
4-5 cucumber slices
1 slice swiss cheese
3-4 slices of deli turkey

Toast the bread.  Then spread the honey mustard on both slices of toast.  Take your apple slices and place on a plate.  Microwave for 1 min.  Place 1/2 of apple slices on one piece of toast.  Top with cheese, cucumbers, turkey and rest of apple slices and finally the last piece of toast.
And enjoy!  :D

Veggie Stuffed Sandwiches

2 pieces of whole wheat bread, 1 pita pocket cut in half, or 1 flour tortilla
Assorted vegetables.
Your favorite sandwich spread.

Spread an even layer of sandwich spread on your preferred bread. You can use hummus, mayonnaise, spicy mustard, etc.
Now add an assortment of fresh vegetables. Ideas include cucumbers, tomatoes, sprouts, olives, peppers, lettuce, spinach, etc. and enjoy!

This is especially good when you have a bunch of fresh produce from your garden.
You could also serve these at a party or get-together. Just have the bread, veggies and spread available and let your guests make up their own veggie sandwich creations!
