Blueberry Sour Cream Pancakes

1/2 C. sugar
2 T. cornstarch
1 C. cold water
4 C. fresh or frozen blueberries

2 C. flour
1/4 C. sugar
4 tsp. baking powder
1/2 tsp. salt
2 eggs
1 1/2 C. milk
1 C. sour cream
1/3 C. butter, melted
1 C. fresh or frozen blueberries

In a large saucepan, combine the sugar and cornstarch. Stir in water until smooth. Add the blueberries. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from heat; cover and keep warm.

For pancakes, in a large bowl, combine the flour, sugar, baking powder, and salt. Combine the eggs, sour cream, milk, and butter. Stir into dry ingredients just until moistened. Fold in blueberries. Pour batter by 1/4 cupfuls unto a greased hot griddle. Cook until browned on both sides; top with berry syrup.
