Recipe Thursday

~ Sweet Potato Skillet ~


This is one of our families favorites when the sweet potatoes show up in the store.  I'm not a big fan of sugary sweet potatoes but I love the salty sweet taste these get in the skillet.  We like to use cast iron but you can use a regular steel skillet as well.

Ingredients: 
- 5-6 Medium white potatoes, sliced
- 4-5 Sweet potatoes, sliced
- Bacon grease or Veggie oil
- 1 large chopped onion, chopped
- 1 package polish sausage, sliced
- 1 bag of frozen green beans
- Your favorite seasoning salt

In a 12 in. to 16in. skillet heat about 4 to 5 T. (Tablespoons) of oil or bacon grease.  Add white potatoes and cook, stirring often, for about 10 min.  Then add your sweet potatoes and onions.  Cook on medium high heat until potatoes are beginning to get tender, about 15 - 20 min.  Stirring often to prevent sticking.  *If you have a lid for your skillet it helps it cook faster if covered.  You may also have to add more oil if there's not enough to prevent sticking.
When the potatoes are beginning to get tender add your sausage and green beans.  Sprinkle with seasoning salt.  Continue cooking until the potatoes are soft.

This recipe makes about 8-9 servings.

Mmm! Sounds good! We grow sweet potatoes in our garden, so I can't to try this once we harvest them!

Wow! I used your recipe for supper on Wednesday! It was very good! Usually I HATE sweet potatoes. And my "picky" siblings even liked it!
