Recipe Thursday

I love Fall recipes and this one sounds REALLY good! Thanks for sending it in Emily H. of IL!

~ Chocolate Chip Pumpkin Cookies ~


Ingredients:


2 cups all-purpose flour

1/2 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. pumpkin pie spice

1/4 tsp. salt

1/2 cup

( 1 stick) butter, room temperature

1 cup sugar

1 large egg

1 can ( 15 ounces) pumpkin

3/4 cup semisweet chocolate chips ( this is optional, these cookies are good with or without chocolate).


Preheat oven to 375. In a bowl, mix together the flour, baking soda, baking powder, pumpkin pie spice, and salt.


In a different bowl, beat together the butter and sugar until fluffy, using an electric mixer. Add egg; beat until smooth.


With mixer on low speed , add your pumpkin, chocolate chips and flour mixture to the butter/sugar and egg mixture ( You'll want to divide the flour mixture into two parts, adding half flour mixture, then all the pumpkin, followed by the rest of the flour mixture and chocolate chips). Mix until just combined ( don't over mix).


Drop dough by heaping tablespoons onto your baking sheets, about 1 1/2 inches apart. Bake until edges a golden, about 15 to 20 minutes ( you may want to rotate your baking sheets half way through baking, so cookies bake evenly).


Immediately transfer to a cooling rack. Once cooled, enjoy!
